Super Dank Bacon Pancakes



Ingredients

12 slices of bacon
2 cups of pancake mix
1 cup of milk
2 eggs
Maple syrup and butter



Directions

Preheat griddle of frying pan
Cook bacon until it's crispy, and place on paper towels to absorb the grease
Prepare pancake mix by mixing it with milk and eggs in a bowl
Place bacon back onto griddle or frying pan
Pour pancake mix over the bacon
Cook until it's golden brown

Serve with maple syrup and butter for topping

Chocolate Covered Bacon





Ingredients

1 pound of thick cut bacon
1/2 cup of semi-sweet chocolate
1 tsp of shortening
1/8 cup of white chocolate

Instructions

Preheat oven to 400.
Line baking sheet with foil and place bacon on foil.
Bake 16 - 20 minutes or until desired crispiness.
Transfer to paper towels to drain.
Allow to cool completely.
Cut bacon slices in half and place in freezer for 30 minutes.
Heat semi-sweet chocolate and shortening by microwaving for 30 seconds stirring and repeating until melted. Allow to cool for 2-3 minutes.
Dip bacon in chocolate and shake off excess and place on wax paper.
Heat white chocolate by microwaving for 30 seconds stirring and repeating until melted. Allow to cool for 2-3 minutes.
Transfer white chocolate to corner of zippered bag and clip tiny piece off of corner to pipe.
Pipe drizzles of white across bacon pieces.
Place in refrigerator for 10 minutes to allow to set.

Simple Yet Delicious Fish Tacos



Ingredients

4 green onions, thinly sliced
2 tablespoons of olive oil
1 pound tilapia fillets, cut into strips
8 (6 inch) flour tortillas
1/2 cup chopped fresh cilantro
1/4 reduced-fat sour cream
2 tablespoons of lime juice
Salt and ground black pepper to taste
1 jalapeno pepper, halved lengthwise
2 1/2 cups shredded red cabbage 

Directions

  1. Mix sour cream and lime juice together in a large bowl; season with salt and black pepper. Reserve about half the mixture in another bowl for serving. Mince half the jalapeno pepper; save other half for later. Toss cabbage, green onions, and minced jalapeno half in remaining sour cream mixture until slaw is well mixed.
  1. Heat olive oil and remaining jalapeno half in a large skillet over medium heat; swirl oil to coat skillet evenly. Season tilapia fillets with salt and pepper. Pan-fry fish strips in the skillet in 2 batches until fish is golden brown and easily flaked with a fork, 5 to 6 minutes. Discard jalapeno half.
  1. Heat tortillas in the microwave on high until warm, 20 to 30 seconds.
  1. Serve fish in warmed tortillas topped with cabbage slaw, reserved sour cream mixture, and cilantro.
